I also have 138 credit hours in Natural Resources with a minor in Environmental Studies. Since there are few jobs where I live that use this kind of education. What other fields of work can I use my education for? I can't move since my wife has a better job than I could get.I have an Associates Degree in Fish and Wildlife Mgmt. and another Associates Degree in Environmental Geology.?
Have you considered Environmental Engineering? With two associates in related fields, you wouldn't be too far away from an engineering degree. This degree could then move you to working with the larger engineering consultancies.
Or, if you are residing in the USA, then a career in civil engineering might be of interest to you. The infrastructure in the USA is desperate for restoration and renewal. See if you can get in touch with something like the department of labor where they might give you more details about job prospects for environmental engineers and civil engineers.
I would also contact engineering consultants to find out what skills they are looking for.
In either case, you are have made significant progress towards a degree in engineering and the many doors this will open for you.

Forestry. The Zoo. A fish hatchery. Some kind of consulting for companies about environmental impact, etc.
